Soft & Chewy Granola Bars

These yummy granola bars are soft, chewy, and perfect for an on the go breakfast or snack! They freeze really well, so also make a great school or work lunchbox treat! I used almond butter, dried apricots, and walnuts, but you can customize the flavors by using different nut or seed butters, dried fruits, & nuts or seeds! There are loads of possible combinations! Here are the ingredients you will need to make them:

Start by preheating your oven to 350 degrees Fahrenheit, then line a 9″ square pan with parchment paper:

Add the oats, flax meal, oat flour, salt, and vegan light brown sugar in a large mixing bowl. (Be sure to use certified gluten free oats and oat flour if you need to eat gluten free!) Stir to combine:

Add the nuts, dried fruit, shredded coconut, and chocolate chips. Mix together:

Add the vegan butter to a small glass mixing bowl, and heat in the microwave until it is melted:

Add the vegan honee and nut butter, then whisk until smooth:

Add the applesauce, vanilla, and plant milk. Whisk to combine:

Add the liquid mixture to the dry ingredients. Mix until evenly blended:

Transfer the mixture to your lined pan, then press it in firmly and evenly:

Bake at 350 degrees Fahrenheit for 32 to 38 minutes, until the top is golden brown. Cool on a rack.

When completely cooled, use the edges of the paper to lift the granola out of the pan. Cut into 18 bars:

Eat a couple with a glass of plant milk!

Wrap the rest individually and store them in a Ziploc bag. Freeze any that you will not eat within a few days.

  • 75 g (1/3 c packed) Vegan Light Brown Sugar
  • 90 g (1 c) Rolled Oats
  • 80 g (1 c) Quick Oats
  • 60 g (1/2 c) Ground Flaxseed Meal
  • 40 g (1/3 c) Oat Flour
  • 4.0 g (5/8 tsp) Salt
  • 120 g (1 c) Chopped Nuts
  • 85 g (1/2 c) Vegan Chocolate Chips
  • 70 g (1/2 c) Chopped Dried Fruit
  • 30 g (1/2 c) Unsweetened Coconut Shreds
  • 56 g (4 TBS) Vegan Butter (I use Earth Balance)
  • 115 g (1/3 c) Vegan Honee
  • 85 g (1/3 c) Creamy Nut or Seed Butter
  • 30 g (2 TBS) Unsweetened Applesauce
  • 30 g (2 TBS) Plant Milk
  • 10 g (2 tsp) Vanilla Extract

Instructions

Recipe Notes

  • Increase the nut butter to 130 g (1/2 c) if you use crunchy style instead of creamy.
  • These granola bars are lightly sweetened. You can increase the brown sugar to 110 g (1/2 c packed) if you want them to be sweeter. I prefer them as written and my mom likes them sweeter!
