These delightful caramelized onions are perfect for any holiday dinner!
Melt the vegan butter over medium heat, then add the jelly, sugar, salt, and pepper. Stir until all the jelly is melted.
Add the onions and stir to coat them with the glaze. Cook over medium-high heat, stirring occasionally, until the glaze reduces. This will take about 15 minutes.
Continue to cook, now stirring very often, until the onions are a lovely golden brown. This will take another five to ten minutes.
Turn off the heat, then stir until all the glaze is off the pan and coating the onions. Serve and enjoy!
