How to make chocolate dipped apricots and chocolate bark.
Get all of your ingredients ready and have everything in place to use when needed. Be sure all of your ingredients are at room temperature.
Follow the directions for How to Temper Chocolate.
Dip each apricot 2/3 to 3/4 of the way into the tempered chocolate, then carefully place it on parchment paper to dry and harden.
Optional: Sprinkle the still wet apricots with chopped nuts. Stop and do this after dipping three to four apricots, or the chocolate will get too dry for the nuts to stick.
As soon as you finish dipping the apricots, add the chopped nuts and craisins to the remaining tempered chocolate, and stir to mix them in.
Spread the mixture onto a large piece of parchment paper, about 1/4 to 1/3 inch thick. Let harden fully.
Cut the chocolate bark into strips, then break each strip into smaller pieces.
Optional: Package your finished chocolates into clear treat bags, and add colorful curly ribbons.
