How to Make Vegan Parmesan Cheeze

Vegan parmesan cheeze is really easy and quick to make, and is so good on pasta, pizza, salads, popcorn, and more! My recipe is different from other vegan parmesans in several ways:

  • I use walnuts and sesame seeds together to achieve the right flavor and consistency.
  • I add a powdered acid to give it a cheesy tang.
  • And, I flavor it with Magical Seasoning Blend, which adds just the right amount of onion, garlic, and other seasonings.

Here are the ingredients you will need to make vegan parmesan cheeze:

You can use either vegan lactic acid or vitamin C crystals for the powdered acid. I prefer the lactic acid, and I use it for other recipes as well, so I recommend ordering some. I get it from Amazon and it is about $16 for the container below, but that is enough to make 75 batches of parmesan! The vitamin C crystals do work too, but are more sour than tangy. The advantage is that you can find them in most health food stores and don’t have to wait to order online.

You should be able to use any small food processor with an S blade. This is the one I use:

Add the sesame seeds, nutritional yeast, Magical Seasoning Blend, and salt to the bowl of your food processor. Blend until the sesame seeds are ground up:


Add the walnuts and pulse a few times:

Check to see if the walnuts are in small bits. If there are still larger chunks, pulse a couple more times. It should look like this:

Give your parmesan a good stir to incorporate any cheeze that has stuck to the bottom and sides:

Transfer to a container with a tight-fitting lid and store in the fridge. I save old spice containers with shaker lids just for this recipe:

Sprinkle liberally on most any savory dish and enjoy! I usually add about three times as much as I show here, but that doesn’t look as pretty in a photo!

 

How to Make Vegan Parmesan Cheeze

Ingredients

  • 120 g (1 c) Chopped Raw Walnuts
  • 18 g (2 TBS) Raw Sesame Seeds
  • 30 g (1/2 c) Nutritional Yeast Flakes
  • 12 g (1 TBS) Magical Seasoning Blend
  • 3.2 g (1/2 tsp) Salt
  • 3.0 g (1 tsp) Vegan Lactic Acid Powder

Instructions

  1. Add the sesame seeds, nutritional yeast, Magical Seasoning Blend, salt, and either lactic acid or vitamin C crystals (see recipe note) to the bowl of a small food processor. Blend well, until the sesame seeds are ground up.

  2. Add the walnuts and pulse a few times. Check to see how ground up they are, and pulse a couple more times if there are still larger chunks. The walnuts should be the consistency and size of grated dairy parmesan cheese.

  3. Transfer to a container with a tight-fitting lid. Store in the fridge.

Recipe Notes

You can substitute 1.2 g (1/4 tsp) of vitamin C crystals for the 3.0 g (1 tsp) of lactic acid. It is a little more sour than the lactic acid, but still very good.

    1. I think citric acid would work as well as vitamin C powder, but it will have a brighter acidity than the lactic acid does. Start with a small amount, blend, taste, and stir in more if needed. Please let me know how it works if you try it!
