Vegan Green Bean Casserole

No holiday dinner would be complete without green bean casserole! This delicious classic dish is so easy to make vegan (and gluten free) by making your own condensed cream of mushroom soup!

I shared the recipe for the soup in my last post, and I found these gluten free French fried onions at Aldi:

They look and taste just as good as the ones with gluten! They are light, crispy and really yummy! You can, of course, use the French’s ones if you can eat gluten.)

Here are the ingredients you will need for the casserole:

Preheat your oven to 350 degrees Fahrenheit. Defrost the green beans and make a batch of condensed cream of mushroom soup. Add the soup to a mixing bowl:

Add the unsweetened plant milk and stir it into the soup. I use Silk Soymilk, but any unsweetened plant milk should work.

Add the pepper and mix it in:

Add a little less than half of the French fried onions and mix again:

Add the defrosted green beans and mix well:

It already looks good!

Transfer the mixture to a 1 1/2 quart casserole dish and spread it out evenly. (Spray the dish first with non-stick spray for easier cleanup later.)

Cover the dish with foil & bake for 40 minutes at 350 degrees Fahrenheit:

Remove the foil and add the rest of the French fried onions around the edge:

Bake for another 10 minutes to brown the onions:

  • 20 oz Frozen Green Beans
  • 1 Batch Vegan Condensed Cream of Mushroom Soup
  • 1/8 tsp Black Pepper
  • 100 g (1 1/2 c) French Fried Onions
  • 60 g (1/4 c) Unsweetened Plant Milk

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit.

  3. Add the soup, unsweetened plant milk, and pepper to a mixing bowl. Stir to combine.

  4. Add a little less than half of the French fried onions and mix again.

  5. Add the defrosted green beans and mix well.

  6. Transfer the mixture to a 1 1/2 quart casserole dish and spread it out evenly. (Spray the dish first with non-stick spray for easier cleanup later.)
  7. Cover the dish with foil & bake for 40 minutes at 350 degrees Fahrenheit.
